Snickers Mug Cake

the cake

  • 4 tablespoons almond meal
  • 2 tablespoons cacao or cocoa
  • 1 tablespoon honey
  • 1 medjool date, seeded and chopped
  • 1 egg
  • 1 tablespoon coconut milk
  • 1 tablespoon peanut butter

the topping

  • 1 tablespoon peanut butter
  • 1 tablespoon maple syrup
  • 1 tablespoon crushed peanuts
  1. Place the cake ingredients into a bowl and mix to combine. Pour the mixture into a mug or ramekin and place it into the microwave for 2 minutes and 30 seconds.
  2. While the cake is cooking place the topping ingredients into a bowl and mix to combine.
  3. Remove the cake from the microwave, top with the topping, eat and enjoy.

notes – the cake continues to cook as it cools, as microwaves vary you may find two minutes adequate.

Can this be cooked in something other than the microwave? Thermomix or oven or stove?
