Sticky Date Mug Cake
- 3 medjool dates, seeds removed and chopped
- 2 tablespoons boiling water
- 2 tablespoons almond butter
- 2 tablespoons almond meal
- 1 tablespoon maple syrup
- 1 tablespoon coconut cream
- 1 egg
- 1/2 teaspoon vanilla extract
- pinch of salt
Caramel Sauce
- 2 teaspoons hulled tahini
- 1 tablespoon maple syrup
- 1/2 teaspoon vanilla extract
- Place the medjool dates into a small bowl and cover with the boiling water.
- Place the remaining ingredients into a bowl and mix to combine. Break up any lumps with the back of your spoon. Add the dates and soaking water to the mixture and stir to combine. Spoon the mixture into a microwave safe bowl, mug or ramekin, allowing a little room for the mixture to expand. Microwave for two minutes.
- While the pudding is cooking place the sauce ingredients into a small bowl and mix to combine.
- Remove the pudding from the microwave and drizzle over the sauce.
- Eat and enjoy.
