Sticky Date Mug Cake with Caramel Sauce


Sticky Date Mug Cake

  • 3 Natural Delight Medjool Dates, seeds removed and chopped
  • 2 tablespoons boiling water
  • 2 tablespoons almond butter
  • 2 tablespoons almond meal
  • 1 tablespoon maple syrup 
  • 1 tablespoon coconut cream
  • 1 egg
  • 1/2 teaspoon vanilla extract 
  • pinch of salt

Caramel Sauce

  • 2 teaspoons hulled tahini
  • 1 tablespoon maple syrup
  • 1/2 teaspoon vanilla extract 
  1. Place the medjool dates into a small bowl and cover with the boiling water.
  2. Place the remaining ingredients into a bowl and mix to combine. Break up any lumps with the back of your spoon.  Add the dates and soaking water to the mixture and stir to combine. Spoon the mixture into a microwave safe bowl, mug or ramekin, allowing a little room for the mixture to expand. Microwave for two minutes. 
  3. While the pudding is cooking place the sauce ingredients into a small bowl and mix to combine.
  4. Remove the pudding from the microwave and drizzle over the sauce.
  5. Eat and enjoy.

Oh yummity yum yum! I often look at my old recipe for sticky toffee pudding, but it is absolutely laden with sugar- I’ll definitely give this a go! Thank you, Lovely Bianca xx

Love this recipe! Tastes just like real sticky date pudding, i can’t believe it can taste this good in 2mins! Makes quite a big portion. Half was enough for me, although my tastebuds were telling me otherwise. Used unhulled tahini as that’s all I have and it was sooo yum.

This was delicious! It’s a large serving size (more like 2 I think) which is never a problem! Just like sticky date and I had all the ingredients ready to go except I used real dairy cream instead of coconut as that is what I had. Will definitely be making again and again… 🙂
