Quick and Easy Christmas Ice Cream

Quick and Easy Christmas Ice Cream

  • 1/2 cup coconut milk
  • 1/2 cup raisins
  • 1/2 cup curants
  • 1/4 cup cranberries
  • 1/4 cup dry roasted almonds, roughly chopped
  • 1/2 teaspoon concentrated natural vanilla extract
  • 1/2 teaspoon mixed spice
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon cloves
  • 2 tablespoons coconut oil
  • 2 frozen banana, chopped (approximately 250 grams)*
  • 4 medjool dates, seeds removed
  1. Place the coconut milk, raisins, currants, cranberries, almonds, vanilla and spices into a medium sized saucepan. Bring to a gentle boil. Reduce the heat to low, cover and simmer for 5 – 10 minutes. Remove from the heat and stir through the coconut oil.
  2. While the dried fruit, nuts and spices are simmering place the bananas and dates into your food processor and blend at high speed until the mixture is smooth, well combined and resembles an ice cream consistency.
  3. Combine the two mixtures and pour the ice cream into a freezer safe, air tight container. Place in the freezer to set for 6 – 8 hours. If you are making this days or weeks in advance it will still be delicious but the consistency will change. We often double the recipes and eat it over several days.
  4. Serve. Eat. Enjoy.

*for a nut free version omit the almonds or replace them with toasted sunflower seeds.

notes – you can also make this with fresh, well ripened bananas. If using frozen bananas make sure they are well ripened and peeled prior to freezing.

Thank YOU! Lu and I LOVE this one. I have been thinking of you and I hope you are going well. I have not been on the computer much and have recently travelled back to my parents with the three little ones, it has been a frantic time! Sending love. B

Is the coconut milk the kind in the carton in the dairy case or the kind in the cans that Trader Joe’s sell?

Bianca Slade April 4, 2016 - 2:08 pm

I am in Australia so no Trader Joe’s here that I know of but it is the one in the can. I hope that helps. x

Hi Bianca, thank you for sharing this – it looks yummy. Do you think it would work as a frozen ice cream pudding, perhaps coated in chocolate, or does the texture go icy if made in advance? Thank you!

Bianca Slade January 4, 2017 - 8:19 pm

Oh that would be divine!!! It does change texture slightly but it is still really good and well worth making that way, I would love it!

I’ve made this recipe for three years now and love it. Just doubled this recipe as it seemed half the recipe I followed last year. I love enjoying it the whole Christmas week.

Bianca this looks delicious. Would you have any idea of the calorie count for a serve please? I could work it out but thought I would be lazy and ask first.
