Chocolate and Goji Energy Bars

Chocolate and Goji Bars (1 of 1)

Brought to you by Woolworths

Throughout my pregnancy and still to this day I am making a batch of these bars at least once a week. My husband and I love them so much that we keep a secret stash hidden in the back of the fridge. As my husband is not the most passionate whole food fan this is very high praise!

Woolworths have asked me to share a Goji Berry recipe on their ever impressive Guide to Goodness site. I straight up knew that this was the perfect choice. I’m hoping that others will love it every bit as much as we do.

If you have not yet seen the Guide to Goodness site, it is worth taking a moment to check it out. You will find many simple and inspiring ways to incorporate whole foods into your day. There are also great write ups on the benefits of certain products, as well as many recipe ideas covering everything from sweet to savoury. Be sure to take a look, you won’t be disappointed.

As with most of our recipes, this one requires few ingredients and very little time but the result is delicious! These bars are sustaining and perfect for mid-afternoon and mid-morning snacks. If you try them out I would love to hear what you think!

Chocolate and Goji Energy Bars

  • 10 medjool dates, seeds removed
  • 1/2 cup goji berries
  • 2 cups desiccated coconut
  • 3 tablespoons Macro Almond Spread
  • 1/4 cup cacao or cocoa
  • 1/2 teaspoon concentrated natural vanilla extract
  • pinch of salt
  1. Place the ingredients into your food processor and blend at high speed until the mixture is completely broken down and sticking together.
  2. Press the mixture firmly into a loaf tin lined with baking paper overhanging the sides. Mine measures 19.5cm x 9.5cm.
  3. Place in the fridge for several hours to set.
  4. Slice. Serve. Enjoy.

*the Macro brand is exclusive to Woolworths.

The Macro Almond Spread has been awarded a five star health rating. The only ingredient in this product is almonds, delicious almonds. Consequently the spread is a source of both protein and fibre. It is free from gluten, colours, flavours and preservatives.

We love Almond Spread and use it in countless recipes on our site such as our ever popular Instant Salted Caramel Ice Cream and our simple and delicious One Minute Fudge. We also enjoy it straight off the spoon or simply spread over celery, apple, banana or baked sweet potatoes.
