Quick and Easy Banana Bread Mug Cake

Banana Bread Mug Cake

  • 1 ripe banana, mashed (100 grams)
  • 1 tablespoon almond meal
  • 1 tablespoon almond butter
  • 2 teaspoons honey
  • 1/4 teaspoon ground cinnamon
  • 1 egg*
  • 1/4 teaspoon vanilla extract
  • pinch of salt
  1. Place the ingredients into a bowl and mix to combine. Spoon the ingredients into a microwave safe ramekin or large mug and microwave for 90 seconds. Stand for 1 minute, stir and tuck in! 

*egg free version here.

note – as all microwaves are different you may find you need to give the mug cake an extra 10 – 30 seconds.

I made this for breakfast this morning and used cashew spread (instead of almond butter) and one tablespoon of golden syrup (instead of honey/rice malt) and then topped it off with crushed roasted almonds – the best!

I was honestly happily surprised by this! I was expecting it to be “eggy” & I HATE eggy flavor in things…
But this was DELICIOUS!
I even made it again with peanut butter and it was great too!! Another slam dunk!!
