There is a lady in my world who I can’t recall never being there.
A lady who has guided me and loved me and supported me every step of the way.
A lady who has only ever seen my positives and has only ever wanted the best for me.
Whenever I am in her company the talk flows freely. I feel warmth and love and I never want to let her go.
She holds my babies and makes them laugh and the mere sight of her fills me with joy.
And yet, she doesn’t see how her smile fills a room, silently seeping into every corner and warming the air like fire.
She doesn’t see how homely she is and how she makes anyone and everyone feel important.
She doesn’t see her pure heart.
She doesn’t know that she is among the few people who give more easily than they take. Whose care and compassion consumes them. Who live for others more than they live for themselves.
She doesn’t see her beauty.
She doesn’t see her worth.
And I wish I could give her just a moment to see herself through my eyes.
I wish I could give her a day to see what I see.
I wish she knew that she is beautiful in every sense of the word.
Vanilla and Blueberry Fudge
vanilla layer
- 1 1/2 cups cashews
- 1/2 cup coconut milk
- 3 tablespoons coconut oil, soft
- 4 tablespoons maple syrup
- 2 teaspoons vanilla extract
blueberry layer
- 1/2 cup cashew butter
- 1/2 cup frozen blueberries
- 1/2 cup coconut milk
- 3 tablespoons maple syrup
- 1/2 cup blueberry fruit spread*
- 3 tablespoons coconut oil, soft
Place the cashews for the vanilla layer into a bowl and cover with hot water, leave them to soak as you gather your ingredients.
Place the cashews into your processor and blend until they are forming a paste. Add the remaining ingredients and blend until smooth. Pour the mixture evenly into the holes of a mini silicon muffin mould. I made 24. Set aside.
To make the blueberry layer place the cashew butter, blueberries, coconut milk, maple syrup and fruit spread into your processor and blend until the mixture is well combined. While blending, drizzle in the coconut oil. Once combined pour the mixture over your vanilla layer.
Place the fudge in the freezer for 8 hours or overnight to set.
Serve. Eat. Enjoy.
*100% fruit spread is readily available in the jam section of the supermarket.
