Two Minute Chocolate Pudding
- 1 ripe banana, peeled and mashed
- 1 tablespoon cacao or cocoa
- 1 tablespoon peanut butter
- 1 teaspoon honey*
- Place the ingredients into a bowl and mix to combine. Microwave for 90 seconds. Allow to cool slightly.
- Eat and enjoy.
*you can use rice malt syrup if you prefer.

I’ve made this several times now- both with peanut butter, as per the recipe, with almond butter for some one who doesn’t like p.n butter (yes, these strange people exist), and with an egg and 2 bananas, for a nut allergic friend. All variations were scrummy yummy- the egg one was cooked in an ordinary oven, and was fluffier- more like a traditional sponge pudding, but still delicious. My latest attempt involved my husband being in charge of the microwave- the pudding was rock hard instead of nice and gooey! (Still delicious). I made it into balls instead, and popped them into the freezer. Waste not, want not!

Just had this for BREAKFAST, haha! If anyone has a rotten day ahead of them- work, school, pmt, etc, start your day with this- I guarantee you’ll have a much better day with this inside you! (Tiny confession…I did add a few spoons of natural yogurt to it, as it’s VERY rich, but you don’t have to!)

Why microwave It? I’ve made choc mousse like this & just whizzed it up. Using banana or avocado or both. Never felt compelled to heat it ? Does it make it cakey?
