Two Ingredient Cookies


two ingredient cookies (1 of 1)
The hardest thing about these cookies is refraining from eating the mixture! My kids love them and we think they are great for school lunch boxes and packed snacks. I hope you like them.

Two Ingredient Cookies

  • 1 cup desiccated coconut
  • 10 medjool dates, seeds removed

Hey Bianca!
I’ve just popped mine in the oven, but I thought you might find it funny that I had a recipe very similar to this, and I used to make balls out of them, and just pop them in the fridge to chill. They’re so yummy, my 4 y/o loved them. Hopefully she loves it as cookies as well!

I am wanting to make these, but only have regular dates. Will it still work okay? Should I use a few more?

My mum made them by soaking ‘normal’ (dried) dates overnight first and they turned out ok – not as great as medjool but still nice 🙂 I don’t think it would work with dried dates straight out of the pack.

Hi Amy, I have tried it but I would double the amount and depending on the strength of your processor you may need to briefly pre soak the regular dates. I hope this helps. Bianca

So, I should have read the comments before I made these. I made them with dried dates (I didn’t know what medjool dates were) and was wondering why the mixture wouldn’t stick together! I fixed it by adding a little honey and they came out beautifully (though no longer 2-ingredient!). I will make them again as I am a frequent visitor to this site but rarely attempt the cookies. Maybe you will help me find my sweet tooth?! Thanks
