Ten Minute Chocolate Mousse Cake

My little mate,

Your bag is ready, your art smock is packed, your drink bottle is filled and you are grinning from ear to ear.

Today you are walking down that school path, thankfully with your sister by your side.

Today is your first preschool orientation. For two hours you will play, paint and sing.

For two hours you won’t be by my side.

You are excited! I am not.

I’m smiling for you and I’m saying all the right things but my heart is full of tears.

Not for the two hours, as unusual as this will be for me. But for all that it represents.

First it’s two hours.

Then it’s one day.

Then it’s five days.

But still, it isn’t just the days.

Right now, as big and independent as you are, I can still see my baby. I can still hear my baby. I can still feel my baby when your arms wrap around my neck and your lips kiss mine.

I know too well that school has a magical way of taking all of that away in the blink of an eye.

I know that one day I’ll send my baby off to school and that afternoon a big boy will come home.

One thing that comforts me is knowing, without any doubts, that I did hold you enough. That we played and cuddled and made the most of our days more often than not.

One thing that comforts me is knowing that I couldn’t have loved you or given you any more than I did.

Despite this I’m not as ready as you. I’m not ready to let my baby boy go.

But you come first. As you kids always will. And today I will smile and sing and embrace your excitement. Today I’ll be proud of you and I’ll kiss you and wave goodbye and leave my tears for when my back is turned.

Thank you, baby boy, for the many wonderful days that we shared. They are locked in my heart among my most favourite things.

Ten Minute Chocolate Mousse Cake

the base

  • 2 tablespoons honey*
  • 2 tablespoons cacao or cocoa
  • 3 tablespoons almond butter**
  • 1 tablespoon coconut oil, soft
  • 2 cups desiccated coconut

the mousse

  • 2 cups coconut mik
  • 4 tablespoons cacao or cocoa
  • 4 tablespoons honey*
  • 1/2 teaspoon concentrated natural vanilla extract
  • pinch of salt
  • 1/2 cup chia seeds
  1. Place the base ingredients into your processor and blend until the coconut is broken down and the mixture is sticking together.
  2. Press the mixture firmly into the base of an 18cm round spring form pan and set aside.
  3. Place the coconut milk, cacao or cocoa, honey, vanilla and salt into your processor and blend until the mixture is well combined. Sprinkle over the chia seeds and keep the mixture spinning at a medium pace for two minutes. Pour the mixture over the base and place the cake in the fridge for several hours or overnight to set.
  4. Slice. Serve. Enjoy.

*you can use rice malt syrup if you prefer.

**to make this nut free sub the almond butter with hulled tahini.

It’s come, it’s come! I’ve just got the most wonderful drawing from Elise ( please apologise to her for me calling her “Lu”, which I realise is your pet name for her), and a fantastic letter, asking me to be her pen pal! Does she know that I’m 56?! I’m tickled pink ( well, purple, as it’s both Elise’s and my favourite colour- I thought hers was pink). I will try and send a letter tomorrow, but am a bit poorlier than normal this week, and away for treatments next week. Please tell her a HUGE “THANK YOU!” What a lovely first daughter you have! I can’t believe you’re posting new recipes, when Juliet is so tiny and you’re not getting any sleep. I’m pretty sure your followers would all be happy with a post along the lines of…..”My baby’s beautiful, I’m exhausted, here’s a link to a recipe you might have missed or forgotten”. I’ve never, ever had a pen pal! I got a little letter off yesterday, but it seems to take ages- I always want post NOW! (that’s why email’s so fab). Thank you for your good wishes- I’m ok, but somehow, despite being predominantly bed bound for nearly 20 years, I’ve torn ligaments in my knees..how on earth did that happen?! Maybe I play squash in my sleep…but I get as little as you do! Hope you are getting a little more rest, but it must be exhausting. xx ps What colours/themes are you going to do Juliet’s room, and how old is Eamon now please? xx

Wendy you make me laugh even though your situation sounds anything but laughable, you are amazing!! I am so sorry you are in pain. You seem to do an incredible job of keeping a great perspective on things and having a positive attitude which I imagine is extremely difficult at times.
To be honest I have been very blessed with our little Juliet. She still feeds every 2 – 3 hours over night but is very content and as long as I am in bed early I am actually feeling pretty good!
Wendy we are hopeless! There are no bedroom themes going on at my place. We had to do a quick clear out of our study and turn that into Juliet’s room for the time being. It is lovely but certainly no colour themes going on. In saying that I am very much a pink with my little miss.
Eamon will be 4 in November. My baby boy is growing up too fast, those school days are approaching and I don’t like it!
I hope you are feeling better. Lu will be beside herself when the mail arrives, it is very kind of you. Please don’t feel obliged.

I made this today and it is so delicious! The friends I shared it with tonight all loved it too. My housemates and I try your different yummy recipes at least a couple of times a week. it sounds like coconut water is pretty crucial to the recipe…if I don’t have any on hand but really want to make this cake can I substitute anything? plain water? will it still have the flavour? thanks heaps!

I would try omitting the tahini and increasing the coconut oil to 2 tbs and decreasing the coconut to 1.5 cups , I hope this helps.

Hi 🙂 I didn’t have any coconut cream and only had light coconut milk (picked up the wrong one!) it’s a bit runny will it be ok to pour over the base or should I use something to thicken it up? Thanks

Made this as a last min dessert. I didn’t have coconut water so I substituted with exact qty of coconut almond milk. Worked a treat. Great dessert. Thank you for sharing.

Oh those words, that story, my heart and my eyes are crying. My baby is going to school next year and I am so not ready. I’m not ready to lose that little face for so many hours. Or for her to be so influenced by others and unprotected out there in the world. It’s such a wrench, does it get easier?

Oh Emma, I am not the person to ask. We are in the process of changing our daughters school, she is eight, so that brings challenges of its own and in many ways is every bit as hard as starting school. But yes, I think it does get easier, or at least sending them to school each day does get easier, not quickly though, or at least not for me. Hopefully you will have lots of pro’s that out way the con’s. My Son has an amazing teacher and that makes a huge difference so if you find one of those I am sure your heart will not hurt quite so much. xxx

Where is the mousse in that recipe? Mousse implies the filling has a lot of air and light fluffiness, this is not a mousse its a chia seed gel… HUGE difference, on the whole very disappointing

I’ve made similar cakes before and the chia seeds will give it a moist, light and fluffy consistency – which is similar to mousse. This is a great alternative for those who are dairy free.

I made this for work, topped with fresh raspberries and it was a huge hit. Delicious. Definitely going to be a regular, it’s so easy and quick to whip up. Next time I’m going to either add some orange zest and juice or a layer of cherries between the base and filling.

The only recipe I have ever made of yours is the one minute slice all the rest I have only drooled over. This month our family embraced a totally wholefoods lifestyle and I was worried about pulling off something wonderful for my hubbys 40th birthday. The 10 min mousse cake was awesome! I added some peppermint extract it was gorgeous! Now I have decided that I am buying myself a set of your books for my birthday. I have a 10 and 7 year old and my hubby and myself. What books would you recommend? Wish I could have them all! Thanks for yoyr awesome delicious creation!
