Lemon Slice
the slice
2 cups desiccated coconut
2 cups cashews
2 tablespoons honey
2 tablespoons maple syrup
zest and juice two small lemons
1 teaspoon vanilla extract
pinch of salt
the icing
6 tablespoons cashew butter
2 tablespoons coconut oil, liquid
2 tablespoons honey

Line a square 20cm tin with baking paper over-hanging the sides for easy
removal of the slice.
Place the slice ingredients into your processor and blend until the mixture is
broken down, well combined and sticking together. Use slightly damp hands to
press the slice mixture firmly into your prepared tin and set aside.
Place the icing ingredients into a bowl and mix until the icing is smooth and
well combined. Pour the icing over the slice and spread to cover the slice.
Place the slice in the freezer for 1 – 2 hours to set.
Slice. Serve. Eat and enjoy.
Makes 16 pieces.
note – once sliced, store the slice in the fridge or freezer.
