My kids adore this breakfast and so do I. They love the taste, I love the ease. Amid the chaos of school morning I simply take this from the fridge to the bowl, dollop on some yoghurt, sprinkle with berries and serve. It is gone in minutes and we can move on to stage two, getting dressed. That takes a little longer…..
I hope you try it. I have shared this breakfast pudding with visitors, friends, and those terrified of anything remotely healthy, all have been enticed. Let me know if you fall prey.
Raspberry Pudding
1 small beetroot, peeled and halved (optional)
1 cup raspberries
1 large banana
2 teaspoons lemon juice
1 cup water
1/2 cup chia seeds
1/4 cup goji berries, plus extra to serve
blueberries to serve
natural yoghurt or coconut yoghurt to serve
Place the beetroot, raspberries, banana, lemon juice and water in your blender. Blend until it is a smooth consistency. Pour mixture into a bowl, sprinkle in the chia seeds, whisk after one minute and again a few minutes later, stir through the goji berries. Cover pudding and refrigerate for a few hours or overnight. Serve with goji berries, blueberries and your choice of yoghurt. Enjoy!
