Quick and Easy Peanut Butter Fudge

  • 1/2 cup peanut butter
  • 1/3 cup coconut oil, liquid
  • 1/4 cup honey*
  1. Place the ingredients into a bowl and mix until they are smooth and well combined. Pour the mixture into the holes of a mini silicon muffin tray or into mini patty pans. Place in the freezer to set and to store.
  2. Eat and enjoy!

*you can use rice malt syrup if you prefer

    Wow! Thank you! This was so easy to make and I can’t believe how delicious it tastes. I made using peanut butter with LSA in it, and I poured the mixture into a silicone muffin tray. Worked brilliantly – can now sneak to the freezer and pop out individual rounds! Next step = coating them in chocolate to make peanut butter cups 🙂

      Hi Debbie, Please would you explain what LSA is? I live in the U.K and have never heard of it- I’m assuming it’s not “Lots of Sugary Additives”?!

        Yes, see below 🙂 it’s a popular additive to baking or breakfast and the Mother Earth peanut butter available here has a variety with LSA in it. It’s yummy!

    My little one has just started kindy. He loves it beyond belief but my heart has too almost broken when I’ve heard of him not being included in something, or heard of someone hitting him etc. Guess these things are a learning curve for us, just as much as they are for them!

    Oh you poor woman- I remember this feeling so well- heartbreak combined with a massive desire to A) storm in and rescue my darling girl, B) Kick the living daylights out of the bullies. Obviously, I did neither, but the year before my daughter left primary school, I insisted that she was (finally, after 5 years of asking) removed from the class with her so called “best friend” (aka known as “Bully Girl”), so she could start High School with a nice bunch of girls. She did, I got good counselling for her, and all the bullying stopped. It’s definitely worth talking to the teachers and asking them to keep an eye on things, although most nastiness is sneaky and happens at playtime or when a teacher won’t notice. You could keep a record as evidence, but in the meantime, remember that your children have the loveliest Mum in the world to come home to and……PEANUT BUTTER FUDGE! Thank you for such a delicious “quick and quiet” recipe- I will try and eat it from the freezer, as you suggest, but I suspect I will have eaten it all straight from the saucepan long before it gets a chance to cool down…well, hot peanut butter fudge sauce- sounds good to me!

    • Oh Wendy you are wonderful! The little dramas as not near as intense as what you have endured! I bet you are glad that is all behind you! Did you have a nice time with your daughter when she came to visit?
      My little man will be off to pre school for one day a week at the end of the year and I am worrying about it. He isn’t confident, out going and independent like his Sister was. He is happy being at home and only likes being around familiar people. Lu will be at the school with him so that gives me some comfort. I am sure he will be fine but those first few weeks might be hard for us both. I hope are going well. I am off for a scan Thursday and will be sure to let you know how I go. xxx

    Unfortunately this is sooo good! Taste like peanut butter chocolate straight from the freezer, I think I prefer it this way rather than out of the fridge. I think I might do a double layer, one chocolate, one peanut butter…yummy!

    I made these tonight and they were delicious! I used rice malt syrup instead of honey though and I think they would have been just that little bit nicer with honey. Unfortunately my husband can’t eat honey. Do you think this recipe would work with maple syrup?
