Quick and Easy Lemon Protein Balls

Lemon Protein Balls 

  • 4 tablespoons almond butter
  • 2 tablespoons honey*
  • 1¬†tablespoons maple syrup
  • zest and juice one lemon
  • 3/4 cup almond meal
  • 1/4 cup vanilla protein powder
  • 1/2 cup desiccated coconut
  1. Place the almond butter, honey, maple syrup, lemon zest and juice into a bowl and mix to combine. Add the almond meal, protein powder and coconut and mix to combine. Use your hands to work the mixture to a dough consistency. Press and shape the mixture into balls and place the balls in the fridge to set.

*you can use rice malt syrup if you prefer.

notes – use slightly damp hands to press and shape the balls.
