Lemon Protein Balls
- 4 tablespoons almond butter
- 2 tablespoons honey*
- 1 tablespoons maple syrup
- zest and juice one lemon
- 3/4 cup almond meal
- 1/4 cup vanilla protein powder
- 1/2 cup desiccated coconut
- Place the almond butter, honey, maple syrup, lemon zest and juice into a bowl and mix to combine. Add the almond meal, protein powder and coconut and mix to combine. Use your hands to work the mixture to a dough consistency. Press and shape the mixture into balls and place the balls in the fridge to set.
*you can use rice malt syrup if you prefer.
notes – use slightly damp hands to press and shape the balls.
