Quick and Easy Lamington Jars

Quick and Easy Lamington Jars

raspberry layer

  • 1/2 cup raspberries*
  • 1 heaped tablespoon 100% raspberry fruit spread**

vanilla layer

  • 1 cup coconut milk
  • 1/2 teaspoon concentrated natural vanilla extract
  • 1 tablespoon maple syrup
  • 1/4 cup chia seeds

chocolate layer

  • 1 tablespoon cacao or cocoa
  • 1 tablespoon maple syrup
  • 1 tablepoon coconut oil, liquid
  1. Place the ingredients for the raspberry layer into a bowl and gently heat. Remove from the heat and mix to combine. Set Aside.
  2. Place the ingredients for the vanilla layer into a bowl in the order listed and mix with a fork or whisk until it is well combined.
  3. Place the ingredients for the chocolate layer into a bowl and mix until mixture is smooth and well combined.
  4. Layer the three components into your jar or jars and place in the fridge for anything from 5 minutes to 48 hours.
  5. Eat and enjoy.

*frozen is fine.
**100% fruit spread is readily available from supermarkets and health food stores or you can easily make your own using a recipe such as this one.

I would say it makes a filling two serves. I made this with Juliet on my hip and my 4 and 7 year old with me so I did the jar and then we all ate what was in the bowls therefore giving accurate servings sizes is a bit tricky but I would say 2 or 3 for those whose appetite isn’t as big as mine. x

That is so sweet of you! I’m going to give it a go this week, as I’ve finally got some chia seeds. I have a terrible confession to make …I have never had Lamingtons, but I know they’re a coconut/chocolatey cake thingy, so your version will be the nearest I get to it.. and one I think I can justify in having for breakfast…yum yum!

I think it is ok to of never had lamingtons when you don’t live in Oz. I have a raw lamington on the site also but this one is quick, easy and quiet! I hope you enjoy it. x

Eating this right now and it is AMAZING!! It’s Australia Day in America for me, so thank you for a healthy taste of what I miss down under. I will put it in a smaller jar next time as there was not quite enough thickness of the delicious chocolate on top. I will definitely make it again and share with my friends!

Made Chicken Indienne for main and then followed with the not quite lamington for dessert. The lammington was delicious, filling and a good counterpoint to the curry. Only made one mistake … didn’t realise the recipe was for two. So maybe we ate too much, but who cares when you are eating good food. Thank you again Bianca.
