Quick and Easy Coconut Truffles


Quick and Easy Coconut Truffles

  • 2 cups desiccated coconut
  • 2 rounded tablespoons honey*
  • 1 tablespoon of coconut cream
  • 1 teaspoon concentrated natural vanilla extract
  1. Place the ingredients into your food processor and blend at high speed until the coconut has broken down and the mixture is smooth, well combined and sticking together.
  2. Using slightly damp hands press the mixture into balls and roll in coconut.
  3. Place in the fridge to set.
  4. Serve. Eat. Enjoy.

*you can use rice malt syrup if you prefer.

So lovely to hear of your little boy’s progress, and your ability, despite your sorrow, to really enjoy and appreciate it. Due to many ear infections, which meant that she missed out on picking up certain sounds at crucial moments, my daughter was a late talker, preferring to scream and point instead. Life became so much nicer and much less frustrating for her, when those magical first words came. Enjoy these precious times, and his adoration! Hello! I have just found your lovely site and tried to make these tonight with my daughter. We couldn’t get the mixture to stay together and as a result I have a lovely bowl of coconut and honey. Any ideas? Yours looks so buttery and luscious.

Hmmm, I would try adding some coconut oil and blending again. Perhaps press it into a lined loaf tin if you cannot get it to form balls. Are you using a food processor?

Thank you. Yes I am. Maybe I didn’t leave them on long enough. I’ll try again! I ended up toasting the ingredients i had and sprinkle them over fruit in the morning!

I left mine whizzing in the food processor for ages but I still had the same problem. A tbsp or so of almond milk fixed it though – yummy!

Just made these – thanks for the milk tip Chris, was having the same issue but a dash of soy milk made the mixture just right! Thinking of trying some additions next time – maybe some fruit or cocoa powder. Has anyone else tried?

Hi I made the coconut truffles yesterday and they came out wonderfully! Great taste and texture. Unfortunately today the leftover truffles have hardened and I’m not sure why. How are the truffles meant to be stored? Should they be stored in the fridge, freezer or left at room temperature?

Thank you. I am glad you enjoyed them. I would store them in the fridge but just let them sit a room temp for a little before serving if you prefer them to be softer. I hope this helps. Bianca
