Quick and Easy Chocolate Chip Nut Bars

Chocolate Chip Nut Bars

  • 1 cup almonds
  • 1 cup cashews
  • 1 cup brazil nuts
  • 4 tablespoons honey*
  • 2 tablespoons almond butter
  • 1 teaspoon vanilla extract
  • pinch of salt
  • 60 grams dark chocolate chips or dark chocolate finely chopped 
  1. Preheat your oven to 180°C or 350°F. Grease a line a square 20cm cake tin.
  2. Place the nuts into your processor and quickly pulse to roughly chop. Add the remaining ingredients and stir until the mixture is well combined and sticking together. Pour the mixture into your prepared tray.
  3. Use damp hands to press the mixture firmly into the tray. Place the slice into the oven and bake for 25 minutes or until lovely and golden.
  4. Remove the slice from the oven and leave it in the tin to cool. Once cool place into the fridge for an hour or so prior to cutting.
  5. Slice. Serve. Eat and enjoy!

*you can use rice malt syrup if you prefer.

Hi Bianca, I love reading your thoughts and perspectives with each recipe. You are very eloquent and I can so relate to your views.
I just want to let you know that this slice is just awesome and even my husband-who sounds a lot like yours-thinks it’s great too. My daughter is not a fan of nuts, but also likes this slice-even though she has an indifferent look when she eats it! Teenagers..
I have tried many of your recipes and enjoy most of them, but this one is definitely a favourite and one I will be making each week (when I do my baking).

Hi bianca I made this recipe and absolutely loved it , I was wondering if I make popcorn can I put less nuts and add cooked popcorn I’m just not sure how the cooked popcorn would go in the oven. Thank you for your lovely recipes
