A Jar of Pumpkin and Pecan Pie

I cannot begin to tell you how good this smoothie is! Do not be scared. If ever there was a time to be brave this is it. Our ‘Jar of Pumpkin and Pecan Pie’ is pure comfort food! Rich, thick, heavy and somehow warming. It is sweet, hearty and tastes almost sinful. My toddler drank sculled all of his, then pinched his sisters. Whip it up, I cannot wait to hear what you think.

A Jar of Pumkin and Pecan Pie

1 frozen banana

1 cup of cold roast pumpkin or pumpkin puree

1 handful of pecans

1 teaspooon of cinnamon

1 cup of water

Blend. Enjoy.

what is cold roast pumpkin. i take it can pumpkin cannot be used.

It is pumpkin that has been roasted then put in the fridge to cool, you could also use canned pumpkin puree. I hope this helps. Bianca

I had some canned pumpkin in the refrigerator that I needed to use, and a pumpkin smoothie sounded like something I needed tonight! 🙂 Canned pumpkin worked fine. It was quite yummy. I didn’t have pecans, and so I used almonds. I also added a tad of maple syrup. Some plain greek yogurt added would probably also be good with it if you can have dairy.

lol….I make this all the time…..great minds…..I lurve pumpkin pie and keep making up different vegan versions…..I even did a vegan PP icecream cake once…..nom nom nom……

It’s pumpkin season here in the U.K (Oct) and this sounds delicious! I’ll have to tell my daughter who owns a “Nutri bullet” squishing machine, but will get my own slave to whizz some up for me first. You have to test these recipes before you pass them on….sometimes 5 or 6 times and then “forget” to let the other person know how scrummy they are!
