Picnic Bliss Balls
- 1/4 cup desiccated coconut (20 grams)
- 1/4 cup raw cashews (35 grams)
- 10 medjool dates, seeds removed (130 grams)
- 1/2 cup crunchy peanut butter (130 grams)
- 1/4 cup cacao or cocoa powder (25 grams)
- 1 tablespoon honey* (30 grams)
- 1/4 cup crushed peanuts (35 grams)
- 1/2 teaspoon concentrated natural vanilla extract
- pinch of salt
- Place the ingredients into your processor and blend until the mixture is combined and sticking togtether. Use your hands to press and shape the mixture into balls and place the balls into the fridge to set.
- Eat. Enjoy.
Thermomix Method
- Place the ingredients into the bowl and blend at speed 10 for 15 seconds.
- Press and shape the mixture into balls. Place the balls in the fridge to set.
- Eat. Enjoy.
*you can use rice malt syrup if you prefer.

Hi Bianca. I can’t believe I haven’t stumbled across you before. I am in love with your recipes. I made these with my girls today. I must admit I only had half the quantity of some of the ingredients so made a half batch. I also couldn’t quite figure out how to put it all together so I just rolled it all into balls. My husband has been a grouch since we quit sugar so was super excited to come home from work tonight and find these in our freezer. He said they definitely tasted like a snickers though rather than a picnic. I’m not quite sure myself but love them whatever they are called. Natalie

Hi just wondering if I can substitute for regular dates how that might alter the texture / taste? Medjool dates are rediculously expensive where I live, and heaps of your recipes call for them. Love your recipes btw, make them weekly. Tia x
