Peanut Butter Slice

Base

  • 1 cup desiccated coconut (70 grams)
  • 1/4 cup crushed peanuts (30 grams)
  • 1/4 cup peanut butter (60 grams)
  • 1/4 cup cacao or cocoa (15 grams)
  • 2 tablespoons honey* (55 grams)

Middle

  • 1/2 cup peanut butter
  • 1/4 cup honey*
  • 1/4 cup coconut oil

Top

  • 60 grams dark chocolate, melted
  • 1 tablespoon peanut butter
  • 1 tablespoon honey*
  1. Line a square 18cm tin with baking paper overhanging the sides.
  2. Place the base ingredients into your processor and blend until the mixture resembles a fine, sticky crumb. Press the mixture firmly into the base of your prepared tin and set aside.
  3. Place the middle layer ingredients into a heat proof bowl and gently heat until the coconut oil has melted and the peanut butter has softened. Pour the mixture over your base and place the slice in the fridge for an hour to set.
  4. Once set, place the ingredients for the top layer into a bowl and mix to combine. Pour this layer evenly over your base and return the slice to the fridge for 30 minutes to set.
  5. Slice. Serve. Eat and enjoy.

Thermomix Method

  1. Place the base ingredients into the bowl and blend at speed 8 for 10 seconds. Continue from step 3 above.

*you can use rice malt syrup if you prefer.

makes 16 pieces.

    Oh my goodness. These words had me in tears. What beautiful sentiments. I have two boys and I remember those days. I don’t think I always appreciated and made the most of that precious love. As Melissa wrote, I too cannot read the recipe through my tears.

      It isn’t always easy to appreciate and make the most of this mothering journey, I am sure we all feel that way from time to time. Often the beauty is in tiny moments, a kiss in the morning before the days chaos begins and so on.         Thank you for replying, I have been scrolling through so many recipes to find where I wrote this message to see if you had!!! I enjoyed some time last week going through the index and found so many new things I wanted to cook that I couldn’t remember where I posted!
        I’m glad you are happy and don’t give it to much thought. I hope your self talk is positive – this is something I struggle with too but we are all doing our best. We are all ‘imperfectly perfect’.
        I got the four pack of your books in the mail today and spent many more moments looking at recipes and reading your beautiful words. One that I particularly loved was about your husband when you wanted him to ‘hop off the mouse wheel’. What a beautiful sentiment. There is such beauty in the small moments and I think you are so gifted at finding them and describing them. You embody gratitude and mindfulness, something so many of us are trying to find. Incredible qualities in a wonderful person.
        The mothering journey is an amazing one, probably akin to mountain climbing! There are so many lovely moments worth hanging on to and making the most of. My husband travels a lot for work and my two sons (6 and 8) have shared my bed for the last two nights – with me in the middle. While it means I cannot move without waking, I relished those lovely warm bodies cuddling up to me. I insisted on a night to myself tonight so I can sleep through (fingers crossed), they are welcome back tomorrow!
        Thank you for your wonderful recipes and for creating this beautiful space. I liked the story you told of your mother-in-law jumping in and talking about Wholefood Simply at the family get together! I hope you talk loudly and proudly about what you do!
