 Mix and Make Jaffa Balls

To the lovely lady I have never met,

Thank YOU for the incredibly generous parcel you sent for my family, for all three of my children. Your kindness blew me away and filled my babies with excitement! My seven year old daughter thinks the only thing better than getting mail is getting airmail; to say she was thrilled is an understatement.

The care and thought that went into your gift was noted. Every book was perfect for the child who received it and I was touched when I read the note attached to Juliet’s gorgeous soother. You are beyond lovely and I do not know the words to adequately convey our gratitude.

However, your kind and thoughtful ways do not stop there. I am not sure when you stumbled across me and my little online space, but I cannot seem to recall a time when you were not inundating me with support or when you were not sharing your wise words that always brighten my day. I feel as though you have read every post I have published and for this alone I am overcome with gratitude.

I wish you well my beautiful far away friend and I look forward to the many adventures that we are yet to share.

Mix and Make Jaffa Balls

  • 1 cup desiccated coconut
  • 1 cup almond meal
  • 3 tablespoons cacao or cocoa
  • zest of two oranges
  • juice 1/2 an orange*
  • 2 tablespoon honey**
  1. Place the ingredients into a medium sized bowl and mix until well combined.
  2. Use your hands to press and shape the mixture into balls. I made 12.
  3. Place the balls into the fridge to set.
  4. Eat and enjoy.

*approximately 2 tablespoons.
**you can use rice malt syrup if you prefer.
