Quick and Easy Chocolate Pudding
- 2 cups almond meal
- 1/4 cup cacao or cocoa
- 2 tablespoons honey*
- 2 tablespoons peanut butter
- 1 tablespoon coconut oil
- 1 cup milk (dairy, almond, coconut – whatever works for you)
Preheat your oven to 180°C or 350°F. Place four small ramekins onto a tray.
Place the almond meal and cacao or cocoa into a bowl and mix to combine. Place the honey, peanut butter and oil into a heat proof bowl and gently melt until the mixture is smooth and well combined. Add the milk and the honey mixture to the dry mixture and stir until the batter is smooth and well combined.
Spoon the mixture evenly into the ramekins and bake for 20 – 25 mins.
Remove from the oven and serve.
Eat and enjoy.
*you can use rice malt syrup if you prefer
