Mini Christmas Puddings



 Mini Christmas Puddings

  • 1 cup raisins
  • 1 cup almonds
  • 2 teaspoons mixed spice
  • 1/2 teaspoon concentrated natural vanilla extract
  • 2 strips of orange zest (optional)
  1. Place the ingredients into your food processor and blend until they are well combined and sticking together. Press the mixture firmly into the holes of a mini silicon muffin mould and place in the fridge to set.
  2. Eat and Enjoy.

    Hi, I made these on Christmas Day and was so impressed! I forgot to buy more almonds so I added a few macadamia nuts to make one cup. This is my new favourite recipe 🙂

    HI Bianca – these were an absolute hit ! My daughter and hubbie are gluten intolerant so it was wonderful to have these simple tasty morsels for them as an alternative to enjoy on Chrissy Day.     I made these for Christmas in July and they were a big hit. Today I made them again but with dry roasted almonds instead of blanched and it took them to a new level of amazing. I also added a little bit of crystallised ginger for some added spice. My kitchen smells fantastic!
