Mini Christmas Puddings


I met this man, this wonderful man; he called me Petal and made me laugh.

We were friends, among many friends. A fun and joy filled group of friends.

A few years passed and soon this man, this wonderful man, decided it was time to move on.

I was also ready for a change; I packed my bags and headed in another direction.

Call it fate, call it chance, or simply call it a random Saturday night. A few months after we had both moved away I was back visiting my old friends for the weekend. It just so happened that this man, this wonderful man, was back that same weekend. We ran into each other on the Saturday night, the same place, the same time. We laughed, we hung out with old mates and we stayed out far too late. At the end of the night he suggested lunch. Yep, sure, sounds great.

Then he rang, in the light of day, again he mentioned lunch. Ohhhh, lunch, just the two of us? What about everyone else? I was a little unsure.

By the end of that meal I had decided that I was ok with marrying this man, this wonderful man.

The road from lunch to our wedding was windy. There were some steeps hills and some long, straight stretches, but we got there and I am so glad that we did.

This man, this wonderful man, plays so many roles in my life. He knows me, like no one else knows me, and although I will never understand why, he loves me, like no one else loves me. I don’t know what I would do without him and I dare not even imagine. There is nothing I can write that can express the gratitude I feel for all that he does for me. For everything he takes in his stride, and for the love he gives despite the obstacles we face. I hope that he knows how much I appreciate all that he is, all that he has been, and all that he will continue to be.

We have had many Christmas puddings together, I am looking forward to having many more.

 Mini Christmas Puddings

  • 1 cup raisins
  • 1 cup almonds
  • 2 teaspoons mixed spice
  • 1/2 teaspoon concentrated natural vanilla extract
  • 2 strips of orange zest (optional)
  1. Place the ingredients into your food processor and blend until they are well combined and sticking together. Press the mixture firmly into the holes of a mini silicon muffin mould and place in the fridge to set.
  2. Eat and Enjoy.

    Hi, I made these on Christmas Day and was so impressed! I forgot to buy more almonds so I added a few macadamia nuts to make one cup. This is my new favourite recipe 🙂

    I made these for Christmas in July and they were a big hit. Today I made them again but with dry roasted almonds instead of blanched and it took them to a new level of amazing. I also added a little bit of crystallised ginger for some added spice. My kitchen smells fantastic!
