To the little girl who smiled, said hello and included my precious baby in her games.

To the little girl who was brave and thoughtful and considerate.

To the little girl who made my daughters day and consequently my week.

If only there were more little girls like you in this sometimes scary world perhaps everyone would have an extra friend, perhaps everyone would laugh louder.

I hope you are as proud of the person you have been this week as I am of you.

Thank you for taking on the new kid. For being kindness and friendship and all things bright.

Lemon Jars
the bottom

  • 2 egg yolks
  • 1 tablespoon maple syrup
  • zest 1 lemon
  • juice 1/2 lemon
  • 1 tablespoon coconut oil

the middle

  • 1 cup full fat greek natural or coconut yoghurt
  • 2 teaspoons maple syrup
  • 2 teaspoons chia seeds
  • 1/2 teaspoon natural concentrated vanilla extract

the top

  • 2 tablespoons sunflower seeds
  • 1/2 cup desiccated coconut
  • zest 1 lemon
  • pinch of salt
  • 2 teaspoons maple syrup
  1. To make the bottom layer whisk your egg yolks and maple syrup in a small saucepan until combined. Add the remaining ingredients and place the saucepan over a medium to low heat. Stir continuously until the mixture thickens. Once thickened remove from the heat. Pour into a bowl and allow to cool. If the mixture gets any lumps while on the heat remove it straight away and whisk until smooth.
  2. To make the middle layer combine the ingredients in a bowl and place in the fridge until all three layers are ready.
  3. To make the top layer heat a medium sized frypan over medium heat. Add the sunflower seeds and toast for 1 – 2 minutes. Add the coconut, zest and salt and mix continuously until the mixture is deliciously fragrant and the coconut is golden. Remove from the heat and mix in the maple syrup. Pour the mixture into a bowl to cool.
  4. Layer the ingredients evenly into two bowls, jars or glasses in whatever order you desire.
  5. Serve. Eat. Enjoy.
