I like my breakfasts to be simple, uncomplicated and sustaining.
I like them to require minimal thought and minimal effort.
I like them to be something I look forward to.
When the sun starts shining I typically start making smoothies. This past week it has been this recipe. I hope you enjoy it.
LCHF Smoothie
- 100 grams full fat natural, greek or coconut yoghurt*
- flesh of half a ripe avocado
- large handful of baby spinach leaves
- 1 cup of ice
- 1 cup of water
- 1 tablespoon coconut oil, liquified (optional)
- Place all of the ingredients except for the oil into your processor and blend until you have a delicious, creamy smoothie. Add the oil and blend again.
- Serve. Drink. Enjoy.
*you can sub the yoghurt with full fat coconut milk or cream that has been stored in the fridge.
note – I often add lime, cucumber or mint if I have them on hand.

Most green smoothie recipes don’t really appeal – either too many green ingredients or too much high-salicylate fruit for me, but I’ve made this the last two mornings and enjoyed it. Being rich, creamy and mild in flavour – it lends itself to some variations. Today I did a ‘vanilla ice-cream’ version, adding maple syrup & vanilla paste. I think I’d like to try adding cacao for a chocolate thick shake next!

Yum! Thank you Bianca (again 🙂 ). I swapped hemp oil for the coconut oil which gave it a definite taste – I’ll try with the coconut oil. It does seem like a good base to experiment with. I like the idea of adding vanilla or cacao. When I had my first sip, I thought I needed it to be a bit sweeter but I just couldn’t stop drinking it. Very enjoyable x
