Cherry Ripe Ice Cream

the ice cream

  • 1 frozen banana, chopped*
  • 1 cup frozen pitted cherries**
  • 2 tablespoons coconut cream

the chocolate

  • 1 tablespoon cacao or cocoa
  • 1 tablespoon coconut oil, soft or liquified
  • 1 tablespoon maple syrup
  1. Place the chocolate ingredients into a small bowl and mix to combine.
  2. Place the ice cream ingredients into your food processor and blend at high speed until the mixture resembles ice cream.
  3. Spoon the ice cream into a bowl and top with the chocolate.
  4. Eat and enjoy!

*peel the banana prior to freezing.
**the frozen cherries are readily available at the supermarket.

Bianca…. this was exceptionally good! It’s a cherry ripe in a bowl. I will definitely make this again. I used a 70% cocoa dark chocolate. I shared it with a friend who couldn’t believe there was no added sugar. Congratulations on such a great recipe.

Thanks for healthy ice cream! Made this twice, one with frozen blueberries in place of cherries, the other with mango in place of cherries. Storing in the freezer for the upcoming warm weather. Also added 4tbsp coconut light cream not 2. Yum yum! Just made the salted caramel and coconut ice cream too for the freezer! !

Hi.
I love the look of this but don’t eat bananas. (I know it doesn’t taste of bananas but I just can’t stand them).
Us there anything I can substitute at all?

I have only made it this way. We have a vanilla ice cream that is dairy based and a coconut and salted caramel ice cream that is coconut based, you might like one of those? Alternatively try frozen avocado?

Refreshing taste, so quick and easy. Loved the way that the chocolate hardened on the cold cherry/banana mix. My husband couldn’t guess that banana was one of the ingredients.
