High Protein Salted Caramel Slice

Base

  • 1/2 cup almond meal
  • 1 cup desiccated coconut
  • 3 tablespoons cacao or cocoa powder
  • 2 tablespoons honey
  • 2 tablespoons peanut butter
  • 1 teaspoon vanilla extract 
  • pinch of salt

Middle

  • 12 medjool dates, seeds removed
  • 2 tablespoons maple syrup
  • 2 tablespoons cashew butter
  • 1/2 cup Salted Caramel Protein Powder*
  • 2 tablespoons coconut cream
  • 2 tablespoons coconut oil, liquid
  • 1 teaspoon vanilla extract 
  • pinch of salt

Top

  • 4 tablespoons cacao or cocoa powder 
  • 2 tablespoons coconut oil, liquid
  • 2 tablespoons maple syrup
  • 1 tablespoon peanut butter 
  1. Line a loaf tin with baking paper overhanging the sides. Mine measures 19.5cm x 9.5cm.
  2. Place the base ingredients into your processor and blend to combine. Press the base firmly into your prepared tin and set aside.
  3. Place the ingredients for the middle layer into your processor and blend until the mixture is well combined. Spoon the mixture over your base and level the top.
  4. Place the ingredients for the top layer into a small bowl and mix to combine. Spread the chocolate evenly over the base.
  5. Place the slice into the freezer to set.
  6. Slice. Serve. Eat and enjoy.

*I have also made this slice with the Vanilla Protein Powder in the same range and it worked well.

    What brand of maple syrup do you use?

    I use Bulk Nutrients Earth (vegan) Protein Powder in salted caramel and chocolate – almost half the price, incredibly quick delivery, and works so well in all the recipes!!
