Quick and Easy Hazelnut and Chocolate Chip Cookies

Hazelnut and Chocolate Chip Cookies

  • 4 tablespoons almond butter
  • 2 tablespoons maple syrup
  • 1 teaspoon honey*
  • 1 teaspoon vanilla extract
  • pinch of salt
  • 40 grams dark chocolate chips or roughly chopped dark chocolate
  • 1 cup hazelnut meal
  1. Preheat your oven to 180°C or 350°F. Line a tray with baking paper.
  2. Place the almond butter, maple syrup, honey, chocolate, vanilla and salt into a bowl and mix to combine. Add the hazelnut meal and mix to combine. You may want to work the mixture with your hands until it forms a dough. Use your hands to press and shape the mixture into balls.
  3. Place the balls onto the prepared tray and flatten. Bake for 10-12 minutes or until golden. Remove from the oven and cool on the tray for five minutes before gently transferring to a cooling rack.
  4. Eat. Enjoy.

*you can use rice malt syrup if you prefer.

    Hi, I’ve just moved overseas, minus my thermomix or any blender. Is there anything that I can substitute for the almond butter? I have no nut butters at this stage. I have bought hazelnut meal as I saw this flash up on my screen last night as these look scrummy! thanks in advance 🙂

    • Any nut butter, even peanut butter would work. Other than nut butters I am not sure what to suggest sorry.

    I loved these! Mine were starting to burn at 9 minutes so I recommend keeping a close eye on them when they are in the oven.

    I love these biscuits Bianca! So moreish and easy to make. Today I used a mix of nut butters as I shared to finish of the dregs of two… so tablespoon of almond butter, 1.5tablespoons of cacao coconut and almond butter and the rest peanut butter. The mix tasted amazing! Thank you for the recipe! xx
