My peppermint obsession has passed, ginger has taken it’s place.
Ginger Snap Bliss Balls
- 1 cup dry roasted cashews*
- 1 cup dry roasted almonds*
- 1/2 cup desiccated coconut
- 1 tablespoon ground ginger
- 2 tablespoons honey**
- 1 tablespoon maple syrup
- 1 teaspoon vanilla extract
- pinch of salt
- Place the ingredients into your processor and blend until the mixture resembles a fine, sticky crumb. Use your hands to press and shape the mixture into balls. Place the balls into the fridge to set.
- Eat and enjoy.
*dry roasted nuts are readily available from the supermarket and health food stores.
**you can use rice malt syrup if you prefer.
