Fruit and Nut Muesli Bars
1 cup almonds
1 cup cashews
1/2 cup desiccated coconut
1/4 cup currants
1/4 cup raisins
5 medjool dates, halved and seeds removed
2 tablespoons maple syrup
2 tablespoons coconut oil, firm
2 tablespoons almond butter
1 teaspoon vanilla extract
pinch of salt
Preheat your oven to 180℃ or 350℉. Grease and line a square 20cm baking tin
with baking paper.
Place the ingredients into your processor and blend until the mixture is finely
chopped and sticking together. Press the mixture firmly into your prepared tin
and bake for 25 minutes or until golden. Remove from the oven and leave in the
tin to cool.
Place the slice in the fridge for one hour prior to cutting.
Makes 16 pieces.
