The Quickest and Easiest Cookie Dough Ice Cream

I wasn’t a fan of banana based ice creams, and then I made this…Enjoy.


Cookie Dough Ice Cream

the cookie dough

  • 2 tablespoons peanut butter
  • 1 tablespoon honey*
  • 1/2 cup almond meal

the chocolate chips

  • 40 grams dark chocolate, finely chopped

the ice cream

  • 3 frozen bananas, chopped
  • 2 tablespoons peanut butter
  • 2 tablespoons cacao or cocoa
  • 1 tablespoon honey*
  • dash of milk**
  1. Place the ingredients for the cookie dough into your processor and quickly blend to combine, spoon the mixture into a bowl and set aside.
  2. Place the ingredients for the ice cream into your processor and blend until the mixture resembles an ice cream consistency. Stir through the cookie dough and chocolate chips.
  3. Tuck in or place the ice cream into the freezer for a few hours. Enjoy!

*you can use rice malt syrup if you prefer.
**Almond milk and coconut milk work well, use whatever you have on hand.

Oh I was so excited when I saw this ice cream, then sadly I read “peanut butter” do you have an alternative to the peanut butter?

you can always sub it for almond butter, cashew butter or sunflower seed butter, i’m sure it will change the taste a little but with all recipes they are fairly interchangeable.

Just made this for a Saturday night treat, wow it is delicious! I used cashew butter instead of peanut butter and it is divine! Even my beer-drinking, junk-food eating, tradie hubby thought it tasted great. Another win for me in my quest to turn him into a “wholefoodie” haha.

Made this just now and it was devoured by us all (2 adults and 4 kids). I doubled the recipe and used Almond Meal and no chocolate (didn’t have any!). So, so good. Yet another of your recipes to add to my list of favourites, thanks so much x

Just made this and it was delicious! I used hazelnut meal instead of almond meal, rice malt syrup instead of honey and left out the chocolate bits and milk.
