Double Chocolate Chip Cookies
- 1 cup dry roasted cashews*
- 1 cup dry roasted almonds*
- 2 tablespoons cacao or cocoa
- 4 tablespoons maple syrup
- 2 tablespoons almond butter
- 1 teaspoon vanilla extract
- pinch of salt
- 50 grams 90% dark chocolate, finely chopped
- Preheat your oven to 175°C or 350°F. Line a tray with baking paper.
- Place the almonds and cashews into your processor and blend at high speed until the mixture resembles a fine crumb. Add the cacao or cocoa, maple syrup, almond butter, vanilla and salt and blend until the mixture is well combined and sticking together. Mix through the chocolate chips.
- Use your hands to press and shape the mixture into balls, place the balls onto the tray and gently flatten. Bake the cookies for 12 minutes or until golden. Remove from the oven and allow to cool for 10 minutes before gently transferring them to a cooling rack.
- Eat and enjoy!
*dry roasted nuts are readily available from the supermarket.

Stop doing this to me! We’re just starting to have warm weather, and I have no chance of getting into my wetsuit and doing my “mermaid thing” if I keep eating ( or even just looking) at your recipes! More chicken and fish please- I’m a vegetarian so I can pass them by…haha! (Mind you, it would be a shame not to make them for a “friend”, wouldn’t it?!

How many does this make? So I know how big to make the balls? Can you use peanut butter instead?

Thank you. I made 2 batches of these for a ‘Thank you’ party favour for a recent celebration. So easy and delicious. Wrapped in a bit of grease proof paper and popped in a brown paper bag with a thank you sticker. Simple, home made awesomeness. I also subbed tahini for the almond butter as that was what I had. I may have also made a test batch and eaten them all myself…. 🙂

These are our new family favourite, thank you! I use 1tb of tahini instead of almond butter. Does it make a difference whether you use raw or roasted nuts?

Oh my goodness…. These biscuits were delish! I say “were” because we ate them in one day! So easy and so yum! I almost didn’t have any to bake because the mixture raw is yum too 🙂 thank you!
