I whipped these up for a lazy Sunday lunch and everybody loved them; the little people, the non- wholefoodies, my fussy pregnant self.

Banana, Date and Walnut Pancakes
- 2 large ripe bananas, peeled and halved
- 4 eggs
- 1/2 cup walnuts, roughly crushed
- 5 medjool dates, deseeded and sliced
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon concentrated natural vanilla extract
- pinch of salt
- 1 rounded tablespoon almond butter (optional)
- Coconut oil – for cooking only
- Place the bananas into a medium sized bowl and mash well. Mash in the almond butter if using. Mix in the eggs until well combined. Add the remaining ingredients (except for the coconut oil) and mix until well combined.
- Heat a medium to large frypan over medium heat. Reduce the heat to medium – low and add the coconut oil. When melted and spread over the base of the pan add level tablespoons of the pancake mixture to your pan, leaving space between each pancake. Cook the pancakes for 2 – 3 minutes each side or until golden. Repeat until all the mixture has been used. I made 24.
