We store this in the fridge and use it to top anything and everything, from smoothies to salads and breakfasts to ice creams. It is also perfect for adding to bliss balls and slices. Enjoy.
- 1 cup quinoa, rinsed
- 1 tablespoon coconut oil
- 1 tablespoon maple syrup
- 1/2 teaspoon concentrated natural vanilla extract
- pinch of salt
- Heat a large frypan over medium heat. Add the quinoa and toast, stirring frequently, for 5 minutes. Add the oil and toast for further 10 minutes, continuing to stir. Once the quinoa is browning and starting to pop turn off the heat and stir in the remaining ingredients.
- Set aside to cool completely.
