I met her a week before I saw the two pink lines that represented my first pregnancy. I’ve never for a moment put that down to coincidence.

I met her then because it would be her that would shape and inspire a great deal of the Mother I would come to be.

It is her whose parenting style I admired. Who, without intention, taught me so much.

It is her who still to this day, even though we are miles apart, I find myself wondering what she would do whenever I’m in a state of uncertainty.

It is her who, unbeknown to her, has guided so much of my parenting journey.

I met her that week because to walk the path I was about to embark on I needed her hand in mine.

I met her that week because the student was ready and the teacher appeared. How blessed I am that this teacher is also one of my dearest friends.


Quick and Easy Vanilla Slice

base

  • 1 cup desiccated coconut
  • 1 cup dry roasted cashews
  • 1 tablespoon almond butter
  • 2 tablespoon honey*
  • 1 tablespoon maple syrup
  • pinch of salt

top

  • 1 cup macadamias
  • 1 cup cashews
  • 3 tablespoons honey*
  • 1 tablespoons maple syrup
  • 2 teaspoons vanilla extract
  • 4 tablespoons coconut oil, soft
  • 4 tablespoons coconut cream
  • pinch of salt
  1. Line a loaf tin with baking paper overhanging the sides for easy removal. Mine measures 19.5cm x 9.5cm.
  2. Place the base ingredients into your processor and blend at high speed until the mixture resembles a fine, sticky crumb. Press the mixture into the base of your prepared tin.
  3. Place the macadamias and cashews for the top layer into your processor and blend until the mixture forms a thick paste. Add the remaining ingredients and blend until the mixture is well combined. Pour the mixture over your base and level the top. Place into the fridge or freezer to set.
  4. Slice. Serve. Eat. Enjoy.

*you can use rice malt syrup if you prefer.
note – once sliced you can store and serve this straight from the fridge or freezer.
