I wasn’t a fan of banana based ice creams, and then I made this…Enjoy.
Cookie Dough Ice Cream
the cookie dough
- 2 tablespoons peanut butter
- 1 tablespoon honey*
- 1/2 cup almond meal
the chocolate chips
- 40 grams dark chocolate, finely chopped
the ice cream
- 3 frozen bananas, chopped
- 2 tablespoons peanut butter
- 2 tablespoons cacao or cocoa
- 1 tablespoon honey*
- dash of milk**
- Place the ingredients for the cookie dough into your processor and quickly blend to combine, spoon the mixture into a bowl and set aside.
- Place the ingredients for the ice cream into your processor and blend until the mixture resembles an ice cream consistency. Stir through the cookie dough and chocolate chips.
- Tuck in or place the ice cream into the freezer for a few hours. Enjoy!
*you can use rice malt syrup if you prefer.
**Almond milk and coconut milk work well, use whatever you have on hand.
