Coconut Fudge
- 2 cups desiccated coconut
- 3 tablespoons coconut oil
- 1 tablespoon honey
- Line a loaf tine with baking paper or cling wrap over hanging the sides.
- Place the ingredients into your food processor in the order above. Pulse at high speed until the coconut is broken down and the mixture is smooth and sticking together. Gently press the mixture into your prepared tin. Place in the fridge to set. Cut. Eat. Enjoy.
