I was four years old when I started school. Real school. The same school as my two big brothers and my next door neighbours. There was myself and two boys. At the beginning it was just the three of us. Can you imagine how excited I was when, in Grade 3, another girl joined us. An instant best friend. I was elated for months.
Even though I know I must have been around eight years old when I met her, in my childhood memory she is always there. She was always a part of our town, and she still is.
I didn’t just fall for her, I fell for her family, her sisters. Having no sisters of my own I remember thinking her life must be as good as it gets.
We were always pretty close, sometimes we would fight, I would cry a lot and we would become friends again. She was older than me in every sense, she was clever and pretty and I thought she was great.
But I left.
I didn’t really go back.
I was still a kid.
She was thrown into an adult world, a torturous adult world.
She lost her precious baby boy. I cannot begin to imagine the pain of it. The story is not mine to tell, even if it was I do not have the words. I pray I never have the words.
She lost her Mother. Her beautiful, placid Mother. She cared for her and watched her fade away before her eyes, while her younger sisters were still children.
And still she smiles. She married her childhood love. Raised an adorable little man. And still she smiles.
I noticed the other day she liked a quote on Facebook, it was along the lines of ‘have you ever missed someone so much you cry each time you think of them?’ I wanted to cry for her. For the unimaginable pain that she has endured, for the emptiness inside her, for her courage, her strength, for the fun times we had. Mostly I wanted to go back 15 years and see it all done differently. Maybe I would be around. Maybe she could hold her son. Maybe her Mum could meet her children.
It is ten years since your precious baby boy was born. Yesterday you celebrated his birthday. I thought of you. Every Australia Day I shall think of you.
I am so sorry.
I wish you happiness.

Chocolate Slice

Base

1 cup rolled oats

6 medjool dates, seeds removed*

1 tablespoon cacao or cocoa

1/2 teaspoon concentrated natural vanilla extract

pinch of salt

Place the ingredients into your blender or food processor and blend at high speed until the mixture forms a ball. This takes a while but it will happen.

*You may need to double the dates, give it plenty of time but if it isn’t coming together add extra dates. The dates are also much softer if you store them at room temperature.

Press the mixture into a loaf tin.

Topping

1/2 cup rolled oats

4 tablespoons hulled tahini

3 tablespoons honey

2 tablespoons cacao or cocoa

1/2 teaspoon concentrated natural vanilla extract

pinch of salt

Pulse the oats until they are ground, you do not have to be to pedantic about this, a bit of texture is fine. Add the remaining ingredients and quickly pulse to combine. Spread the mixture over your base and return to the fridge to set. Enjoy!!!

Thanks, Bianca for the story. It brought tears to my eyes for I have a friend who lost her little one recently. You call yourself simple, but I believe you are a truly wonderful woman who can see, observe and remember all those little things that really matter in life. Thank you for that.

Hi, thanks for this story and recipe. Being a Mum makes you cry for other Mums. My question is about tahini – when you have a jar of tahini that has quite a lot of liquid in it (I guess it is sort of separated) do you just mix it up as best you can and use whatever you get whether it is more paste or runny? Mine doesn’t want to mix back together very well. Any advice? thanks.

Hi Karen, thank you. Yes I would mix to combine and then use that. I typically mix it with a knife and try to get right to the bottom of the jar. I hope this helps. Bianca

Can you substitute the tahini with something else? I found the flavour of that a bit overpowering above the other ingredients. Also had trouble with the dates not breaking down again – I did follow your suggestion of leaving them at room temperature – which today was hot! My base didn’t come together into a ball even after 1/2 an hour of blending, in the end I took it out, and just pressed it into the tin. My husband loved it, but my son spat it out – and it is my son, that we are trying to cut down on sugar for. But he does have autism and is very fussy. Sorry to sound negative, I’m just a newbie, and finding it really hard find recipes.

Hi Lorraine, there is no need to be sorry, transiting to wholefoods isn’t an easy journey, all credit to you for taking it on. Did you use hulled tahini? This is important as unhulled has a much stronger taste, You could also use roasted almond butter or peanut butter. perhaps try presoaking your dates in water. I hope some of that helps. Thanks for the reply Bianca. I will try soaking the dates next, and maybe almond butter. Yes the Tahini was hulled. I think the seeds and nuts are going to be my biggest challenge personally as I’ve never really eaten or enjoyed them. It will challenge the kids too, its my husband who is spearheading the journey really.

I made this slice! I love the base, but finding it difficult to enjoy the top part with the tahini. Is there any other paste I can use instead of the tahini or almond or any of those pastes? I don’t like peanut butter, and I’m finding the tahini taste not really to my liking…a substitute like???

I used about three or four more dates and it came together nicely. You have to make sure you use the medjool dates, not normal dried dates as they have a lot less moisture. They don’t taste as good either. I also used peanut butter instead of tahini as the kids won’t eat tahini. I really like this, it tastes like a Summer Roll. Brings back memories!

I decided to add a dash of water it formed together better but will wait to see what the results will be in the taste test approx how many pieces does anyone get out of this I did a cal count for 12 and its around 220 is this good .?

Hi Anita, thank you. You said previously that you are using a thermomix, I am sure if you give it plenty of time you will not need to add water, you could add a couple of extra dates if you want but I have made this many times and I promise it does hold together as a base just as is. Hi Bianca i blended for well over 5 min which is excessive in the thermo it didn’t form a vll thats when i added the dash of water it then held well but i will try adding a couple extra dates as i felt the base was too rubbery after adding water

Bianca, this is so good! I used unhulled tahini as I already had it, and it was delicious.. The tahini taste was noticeable but I found it went really well together. By the way, I am loving your cookbook 🙂

Hi Bianca! I recently found your site and today I have made this chocolate slice – it’s my first time using a wholefoods recipe. I had to use 10 dates to make the base form into a ball – apart from that I followed your recipe exactly. I pressed the base and topping into a mini muffin pan as I had a bit of trouble getting it to stick in the loaf pan. They turned out beautifully and taste wonderful. Very reminiscent of halva, which I have always loved. The recipe made 18 little ‘tarts’. Thank you for sharing your recipes with us – I will be trying more very soon! Xx

We made this slice today, and it turned out quite well. I didn’t have quite enough tahini so I added about half a small banana to the topping, and no more then a tablespoon of honey as I used dried dates and find them very sweet. I also roughly blended, into the base mix, a handful of sunflower seeds. Very yummy.
I put it into the freezer to set it and it’s actually delicious to eat straight from there while still cold. Plus it keeps it out of my constant eye sight, so it might last longer than one day!

I made this recipe last night and I am addicted!! I added coconut oil to the topping as it seemed a little dry and it worked out great, also sprinkled coconut on top which tasted amazing!

Hi Bianca
I love looking at your recipes but have not been able to make some due to the fact that the contain cashew nuts. Can they be replaced with something else? And if so what as I would still like the taste to be same but substituted. I’m guessing there may be different substitutes for different recipes
