Quick and Easy Chocolate Peanut Butter Fudge
- 6 tablespoons peanut butter
- 3 tablespoons honey
- 1 tablespoon coconut oil, soft or liquid
- 1/2 teaspoon concentrated natural vanilla extract
- pinch of salt
- 1 tablespoon coconut flour, sifted
- 100 grams dark chocolate, melted
- 1/2 cup crushed peanuts
Place the peanut butter, honey, coconut oil, vanilla and salt into bowl, mix to combine. Add the coconut flour, combine. Spoon the mixture into the holes of a mini silicon muffin mould and place in the freezer to set.
Once the peanut butter mixture is firm (approximately 1 hour in the freezer) melt your chocolate. Use two forks to dip the peanut butter cups into the chocolate and place them onto a tray lined with baking paper (it is a good idea to sit the tray in the freezer for 10 or so minutes prior to this step). Once coated sprinkle the chocolates with crushed peanuts and return to the fridge or freezer to set.
Serve. Eat. Enjoy.

Thank goodness for this recipe. Today when I was standing in a very long line at Coles I saw… PEANUT BUTTER TIM TAMS… I was so very close to buying them as I love peanut butter and just needed to try them. But no my will power won..(for today).. But thanks to this wonderful recipe I will not be caving in!!!

Yum! Is there a way I could make this work if I don’t have a dark chocolate bar but I have some cacao and cocoa as well? Would a mixture of one of these work, perhaps with coconut oil?
You could try making a choc with coconut oil, cacao and honey and dipping it into that. There are many variations of this chocolate on our recipe, the raspberry chocolates, peppermint slice etc.
