Chocolate and PB Fudge

Chocolate and PB Fudge (1 of 1)

I made this fudge for a friend who follows the FODMAP diet, the recipe was than requested by everyone who tried it. I hope you enjoy it as much as we do.

Chocolate and PB Fudge

the PB

  • 6 tablespoons smooth peanut butter
  • 3 tablepoons coconut oil
  • 3 tablespoons maple syrup
  • pinch of salt

the choc

  • 2 teaspoons smooth peanut butter
  • 1 tablespoon maple syrup
  • 1 tablespoon coconut oil
  • 2 tablespoons cacao

Place the ingredients for the PB layer into a heat proof bowl and heat until the oil starts to melt. Remove from the heat and stir the ingredients until they are smooth and well combined. Pour the mixture into a silicon loaf tin and place it into the freezer while you make the chocolate layer.

Place the ingredients for the chocolate layer into a heat proof bowl and heat until the oil starts to melt. Remove from the heat and stir the ingredients until they are smooth and well combined. Spoon the mixture on top op the peanut butter layer and use a skewer or knife to swirl it. Return the slice to the freezer to set.

Slice. Serve. Eat. Enjoy.

    Are any of your other recipes low FODMAP? I am a long time follower and baker of so many of your goodies. I have just been advised to go low FODMAP by my gastroenterologist…..already missing my or should I say your picnic balls!!

    I made these for my babies for afternoon tea today. I made them in my thermomix, making the peanut butter fudge first, then not rinsing the bowl out, and only adding 1 teaspoon of peanut butter to the chocolate.
    My kids, all 4 of them (which is very rare), loved it! And I loved that I didn’t feel guilty saying yes when they came back and asked if they could have a second piece!

    • It keeps really well, I think 6 – 8 weeks would be fine. x

    • It will melt outside of the fridge / freezer.

    Yum, yum, yum. Only suggestion I would make to anyone wanting to make this- double the recipe. My first batch was eaten in no time, so I have just make a double batch.
