Chocolate Granola
- 1 cup cashews
- 1 cup almonds
- 1/2 cup crushed peanuts
- 1/4 cup currants
- 1/4 cup raisins
- 1/4 cup honey*
- 1/4 cup cacao
- 1 tablespoon coconut oil
- pinch of salt
- 1 teaspoon vanilla extract
- Heat a frypan over over medium – high heat and gather ingredients.
- Add the cashews and almonds to the pan and toast until becoming golden and fragrant, around 5 – 6 minutes. Add peanuts and toast for a further 2 minutes, stirring continuously. Turn off the heat and add the remaining ingredients, mix to combine.
- Leave the granola to cool.
- Eat and enjoy.
*you can use rice malt syrup if you prefer.
notes –
- Our favourite way to have this is straight up without adding a thing. It is a perfect on the go snack. However, we also enjoy it with yoghurt and berries or banana and peanut butter and over our homemade ice creams.
- you can use dry roasted cashews and almonds and omit the first step if desired.
