Quick and Easy Chocolate Fudge Cookie Dough

Chocolate Fudge Cookie Dough

base

  • 4 tablespoons peanut butter
  • 2 tablespoons honey
  • 1 cup almond meal

top

  • 2 tablespoons honey
  • 2 tablespoons peanut butter
  • 2 tablespoons cacao or cocoa
  • 2 tablespoons coconut oil, liquified
  • 1 teaspoon vanilla extract
  • pinch of salt
  1. Place the peanut butter and honey for the base into a bowl and mix to combine. Add the almond meal and combine. Work the mixture with your hands until the mixture resembles a dough. Press spoons of the mixture into the holes of a mini silicon muffin mould, I made 18.
  2. To make the top place the ingredients into a bowl and mix until the mixture is smooth and well combined. Pour a spoon of the mixture over each base and place in the fridge or freezer to set and to store.
  3. Eat. Enjoy.

Makes 18
notes – you may want to gently heat your peanut butter and honey for the base if your peanut butter is thick. These can be eaten directly from the freezer.

You could try leaving it out, maybe use a bit more peanut butter, as it’s just for the top. Bianca has a “chocolate” /dip/ bliss ball recipe ( can’t remember which!) which is just peanut butter ( or tahini), honey and cocoa, and it’s lovely. It might not set so well though, but hey, it will still be delicious as a sauce to pour on top! x

You can leave it out but may need to use your hands to press the chocolate layer onto the base as opposed to pouring. I hope this helps. x

just made this one. my first from the Wholefood Simply website. Thank You 🙂 Picked an easy one and I didn’t stuff it up – and my daughter LOVES it. Better than Reese’s she said 🙂 But she wants to use the left over coconut oil for her hair – argh!!!!

I made this last week and it was delicious!!! I used a combo of almond meal and oat flour for the base (just what I had!) and the base seemed a tad crumbly at first so I added a spoonful or two of coconut oil which made it stick together better (if anyone else has that problem!)
anddddd I used maple syrup instead of honey because that’s all I had 🙂 and I added a bit of vanilla essence to the chocolate part! (what I usually do with my homemade chocolate).
But seriously, this slice is so yummy and beats any store bought candy bar in my opinion. Thanks Bianca!

I am on a roll, the honey joys I made last night were awesome too, not sure what I like the best but I am so happy to be able to make my kids some snacks that they enjoy and they are not full of rubbish or sugar. I am now searching for my next recipe in your collection to try. Thank you Bianca.
