Chocolate Brownie

Brownie

Brought to you by Woolworths

There is seldom a new product that hits the health food aisle and doesn’t end up in my trolley.

Some of them sit in my cupboard for months, untouched. Others I have ideas for before I am even through the checkout.

Teff falls into the latter category.

Before I had this tiny, nutrient packed, gluten free grain home I was imagining brownies and bread, porridge and pudding, savoury and sweet.

For those of you who are unfamiliar with Teff, it is a similar size to a poppy seed and has an exceptional nutritional profile. Not only is it a complete protein (great news for vegans and vegetarians and anyone trying to incorporate protein into every meal) but it is also a great source of calcium, dietary fibre and essential minerals.

Best of all it is simple to prepare, versatile and has a lovely, light, nutty taste.

So, after I had grabbed several packets from the health section of my local Woolworths I whipped up my first Teff creation, these Chocolate Brownies. They were quick, easy and turned out even better than I expected. Consequently, I have now made countless batches (due to requests from my initially skeptical husband who was not convinced my whole food brownie could compare to the real deal).

I also made these Savoury Bowls for breakfast Saturday and the equally delicious sweet version Sunday. Both have reappeared on our weekly menu and are great options for anyone who loves oats but whose body may not.

The Teff, in all forms, has been a hit with everyone from the littlest people to the biggest people in my family. It has become a staple in our gluten free home and I hope you are able to get your hands on some, if only to try out these brownies! They have gone straight to the top of my husband’s favourites list and have already become a go to recipe for me. Not just because they are so easy but because they suit many restricted diets, take little time to make and taste every bit as good as the original version.

Chocolate Brownie

  • 1/2 cup Macro Teff (raw weight, cook the Teff according to the packet instructions)
  • 2 tablespoons cacao or cocoa powder
  • 100 grams 90% dark chocolate, roughly broken
  • 1 cup coconut sugar
  • 2 tablespoons maple syrup
  • 1 tablespoon coconut oil
  • 2 eggs
  • 1 teaspoon vanilla extract
  • pinch of salt
  1. Preheat your oven to 175°C or 350°F. Grease and line a square 20cm cake tin.
  2. Place all of the ingredients into your processor in the order listed above. Blend at high speed until the mixture is smooth, well combined and resembling a cake batter. Pour the mixture into your prepared tin, level the top and place the brownie into the oven.
  3. Cook for 30 – 35 minutes. Remove from the oven and leave in the tin to cool. Place the brownie, in the tin, into the fridge overnight.
  4. Remove from the tin and slice, serve, eat and enjoy!

Notes – as I said above I have made this many times now and although we love it as it is, we also like to mix it up a bit. Once blended you can stir through any one of the following:

If you cannot get into a store, you can also get Teff here. If you are not sure what you are looking for, below is a pic of the one I have been using.
