Choc Apricot Slice
the base
3 tablespoons honey
3 tablespoons almond butter
1 teaspoon vanilla extract
pinch of salt
4 tablespoons cacao or cocoa powder
1 and 1/2 cups almond meal
the middle
1 tablespoon apricot fruit spread
1/3 cup dried apricots, finely chopped
the top
2 tablespoons maple syrup
4 tablespoons coconut oil, liquid
6 tablespoons cacao or cocoa powder
Line a loaf tin with baking paper over-hanging the sides. Mine measures
19.5cm x 9.5cm.
Place the almond butter, honey, vanilla and salt for the base into a bowl and mix
to combine. Add the cacao or cocoa powder and mix to combine. Add the
almond meal and mix to combine. Use your hands to work the mixture into a
dough. Press the dough into the base of your prepared tin.
Use the back of a spoon to spread the fruit spread over your base. Sprinkle over
the dried apricots.
Place the ingredients for the chocolate topping into a bowl and mix to combine.
Pour the chocolate topping over the base, enclosing the dried apricots and jam.
Place the slice in the fridge to set.
Slice. Serve. Eat and enjoy.
Makes 12 pieces.
notes – place the slice in the freezer for 20 minutes prior to cutting. Once cut, the slice can be stored in the fridge or freezer.
