It is Friday night. I am sitting at my kitchen bench attempting to catch up on the things I didn’t get to do during the week. My husband is drinking beer. He is rambling about sport. I dare not complain, he is cleaning out my chaotic fridge at the same time.
In between comments such as; ‘What is a bloke to do between football and cricket season?’, there are complaints of spilled juice and an excessive amount of homemade stock and fermented vegetables. I am chuckling inside.
It hasn’t been a great day. My little boy has been most unhappy, my little girl is exhausted and I haven’t felt well. But my husband came home with flowers and joy in his voice and turned everything around.
We have listened to tunes, told stories; and put the week behind us.
I love nights like this. When it is simple, fun. When he makes me laugh. It puts everything into perspective, it reinforces what really matters. This, what we have right here, right now, that’s what matters.
Oh and choc mints, they always matter.
Choc Peppermint Coins
1 cup (150 grams) roughly chopped cacao butter
1/2 cup cacao or cocoa
4 tablespoons honey
1/2 teaspoon vanilla
1/2 teaspoon peppermint*
pinch of salt
Melt cacao butter over low heat. Stir in the honey until combined. Remove from the heat and stir in the cacao or cocoa until the mixture is smooth, add the vanilla, peppermint and salt. Pour into mini muffin silicon moulds to half full. Put in the fridge to set. Enjoy!
*you can use essence or extract, if you are using pure peppermint oil I would halve this amount.
