Choc Coconut Slice
the slice
2 cups desiccated coconut
4 tablespoons almond butter
4 tablespoons cacao or cocoa powder
3 tablespoons honey
2 tablespoons coconut cream
1 teaspoon vanilla extract
pinch of salt
the icing
3 tablespoons cacao or cocoa powder
2 tablespoons coconut oil, liquid
1 tablespoon maple syrup
2 tablespoons desiccated coconut
Line a loaf tin with baking paper over-hanging the sides. Mine measures
19.5cm x 9.5cm.
Place the slice ingredients into your processor and blend until the mixture
resembles a sticky crumb. Press the mixture firmly into your prepared tin.
Place the icing ingredients, excluding the desiccated coconut, into a bowl and
mix to combine. Spread the icing over your slice, sprinkle over the coconut and
place the slice in the fridge to set.
Slice. Serve. Eat and enjoy.
