Choc Chip Peanut Butter Bars

  • 2 cups rolled oats
  • 1/2 cup peanut butter
  • 1/3 cup honey*
  • 1 teaspoon vanilla extract
  • pinch of salt
  • 50 grams dark chocolate, chopped
  1. Preheat your oven to 180°C or 350°F.
  2. Grease and line a square 20cm tin with baking paper over-hanging the sides.
  3. Place the oats into your processor and blend to combine. Add the remaining ingredients and mix to combine. Press the mixture firmly into your prepared tin and place into the oven. Bake for 16-18 minutes. Remove from the oven and cool in the tin for 15 minutes before gently transferring to a cooling rack to cool completely.
  4. Slice. Serve. Eat and enjoy.

*you can use rice malt syrup if you prefer.
note – these are a dry style bar, think cookie as opposed to cake, which I love but it isn’t for everyone. In saying that they are a huge hit with all at my place and I hope they work just as well for you.

I am notorious for being a bad decision maker! Though I don’t seem to have any problem deciding to make these bars – they look so addictive!!

absolutely delicious! I used 1/2 cup cacao nibs instead of the choc bar, and baked it in a slice tin (couldn’t find my square one)
the smell as they are cooking is just ridiculous!!!! and soo addictively yummy….

i also just love that these are made with ingredients most just have available…..just amazing. i woke up and was supposed to be studying (nutritional medicine) but was having one of those ‘feeling down’ kinda days……cooking always makes me feel better, and I had found this recipe the night before….needless to say within an hour I was at my desk studying with a nice cup of dandelion tea and 2….ok….3….pieces of this amazing food!! thanks for such amazingness xx

Made these yesterday, have a thing for peanut butter & Choc at the moment. Love them, not too dry at all, (they look dry but as eating them the texture changes and is quite definitely moist enough. Thanks for another great recipe. Simone
