Carrot Cake Mug Cake with Instant Cream Cheese Icing

  • 1 carrot, grated
  • 1 tablespoon almond butter
  • 1 tablespoon almond meal
  • 1 tablespoon honey
  • 1 tablespoon coconut cream
  • 1 egg
  • generous sprinkle cinnamon
  • 1/4 teaspoon vanilla extract

Icing

  • 1 tablespoon cream cheese
  • 1 teaspoon honey
  • 1/4 teaspoon vanilla extract
  1. Place the Mug Cake ingredients into a bowl and mix to combine. Pour the mixture into a mug or ramekin and place it into the microwave. Cook for 2 minutes.
  2. While the cake is cooking place the icing ingredients in a bowl and use a fork to combine the ingredients until they are smooth and looking delicious. Top the cake with the icing.
  3. Eat and enjoy!

My favourite, quick and easy dairy free icing is used on both the no bake and cooked Carrot Cakes in Natural Indulgence and works perfectly with this recipe. I don’t think I have shared that icing on the website as yet. One from the website that will work well but needs to be made in a larger quantity is this.
