Carrot Cake Mug Cake with Instant Cream Cheese Icing
- 1 carrot, grated
- 1 tablespoon almond butter
- 1 tablespoon almond meal
- 1 tablespoon honey
- 1 tablespoon coconut cream
- 1 egg
- generous sprinkle cinnamon
- 1/4 teaspoon vanilla extract
Icing
- 1 tablespoon cream cheese
- 1 teaspoon honey
- 1/4 teaspoon vanilla extract
- Place the Mug Cake ingredients into a bowl and mix to combine. Pour the mixture into a mug or ramekin and place it into the microwave. Cook for 2 minutes.
- While the cake is cooking place the icing ingredients in a bowl and use a fork to combine the ingredients until they are smooth and looking delicious. Top the cake with the icing.
