Almost Instant Caramel Popcorn
- 1/4 cup raw weight popcorn, popped
- 3 tablespoons peanut butter
- 2 tablespoons maple syrup
- 1 tablespoons coconut oil, melted
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- While your popcorn is popping add the peanut butter, maple syrup, coconut oil, vanilla and salt to abowl and stir until the mixture is smooth, runny and well combined.
- Pour the mixture over the popped popcorn and stir to combine.
- Eat and enjoy!

I made it with rice malt syrup instead of maple and increased the unpopped popcorn to a third of a cup (that cheapo hot airpopper has redeemed itself!)
As good every childhood memory I have of it!! I used to eat it with my teeny tiny Chinese grandmother ????

I love this.. I made a double batch today by also adding a bag of the whole grain puffed corn (its in the healthy section of WW) to my usual pop corn. Rave reviews!
Also, I have to say I love what you’re doing with the photos too! I’m a photographer of people and I think that you’re doing a fab job with the food!!
