A Quick and Easy Christmas Cake Recipe


Quick and Easy Christmas Cake

  • zest and juice of one orange
  • 1 cup raisins
  • 1 cup currants
  • 1 cup cranberries
  • 1 cup slivered almonds
  • 3 cups almond meal
  • 2 small, ripe bananas (the flesh of mine weighed 200 grams)
  • 10 medjool dates, seeds removed
  • 2 teaspoon mixed spice
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon concentrated natural vanilla extract
  • pinch of salt
  1. Preheat your oven to 175°C or 350°F
  2. Grease a 18cm round cake tin. I used my spring form pan, if you are using a cake tin I would line it also.
  3. Place the zest, juice, raisins, currants, cranberries and almonds into a medium sized saucepan. Heat until the juice starts to boil. Reduce the heat to low. Cover. Simmer for 5 – 10 minutes, stirring occasionally.
  4. Place the almond meal, banana, dates, spices, vanilla and salt into your food processor. Blend at high speed until the mixture resembles a smooth, thick batter. Stir through the raisin mixture.
  5. Spoon the cake mix into your prepared tin and use damp hands to smooth over the top of the cake.
  6. Bake for 30 minutes. Cover with foil and bake for a further 15 minutes.
  7. Remove from the oven and cool in the tin for 30 minutes. If you are using a spring form pan remove the sides and allow the cake to cool completely.
  8. I store this in the fridge and while it is great eaten the day it is made, I prefer it the next day and the day after that.
  9. Enjoy.

note – I serve this cake upside down, once cooked and slightly cooled I flip it onto a cooling rack and make the bottom the top.

    I have a question about the cake, how long would it keep for? If I were to make it as a gift to give. The same question actually for your gingerbread biscuits. Your amazing recipes are sounding rather delicious to create into gifts. xx

    • Thank you. Yes I think this cake is a great gift, I know myself and my friends and family would all love to receive it. It keeps really well in terms of still looking and tasting delicious but I can’t advise from a food hygiene perspective sorry. I personally would be happy to keep it for a week. There are no eggs or dairy which helps when it comes to food safety. Did you see the Christmas Bites that I posted today? That is another great gift which keeps well. Oh sorry, the gingerbread, they keep well too 🙂

    Could the almond meal be substituted with gluten free flour?

    • I haven’t tried this sorry. I am not sure if it would work. We also have a fruit cake recipe that uses coconut flour if that helps?

    Im made it this weekend for my family in law and it was a great success! I din’t have a festive ribbon at home so I cut a straight stripe of wrapping paper and fixed it around the cake. I told them the cake had no butter, milk, eggs and refine sugar… they were very impressed by its elegant appearance and the faithful taste. Its a pretty fancy one. Next time I’ll add some pecans to balance the tart taste.

    Hi. Love cake without the sugar. My husband loves fruit cake but I know he would appreciate alcohol in it. If I wanted to use alcohol, how do I substitute it for the liquid in the recipe?

    • Hmm, I would add half a cup of brandy and three tablespoons of honey in place of the lemon and orange juice. That is just off the top of my head but it is what I would try. I would love to hear how you go with it. I hope that helps. Bianca

    Bianca, this cake is divine! Thank so much for sharing your recipe. Being egg free (as well as dairy,gluten etc), I had essentially given up on (good) cake for now. I like this better than traditional Christmas cake by far, so it’s a real treat for us this Christmas. I left the fruit soaking in the juices & spices with banana/dates overnight – Ian unplanned adjustment think but a good one I think – the flavours were quite deep & the fruit very juicy. Almonds are out for us so I used ground cashews for base & roasted hazelnuts & pecans through it. Amazing.

    OK so this cake was amazing. I wanted to do a traditional Christmas cake and it didn’t disappoint. I added marzipan and icing to mine just because it’s christmas and mainly because it looks nice sitting on the side although it was plenty sweet enough without. I also added a glug of brandy to the fruit. I rarely comment on these things but I will make this every year now. X

    • I am sorry but I have only made this one this way, there is another on the app that doesn’t use almond meal and there is also an older fruit cake recipe on the site that from memory does not use almond meal. I hope this helps.

      Yes I think you could half this without any problems, just adjust the cooking time. It also freezes well if that helps.

    Thank you Bianca, this is an amazing recipe. I made it for Christmas and added a touch of Grand Marnier to give it some punch and it was totally delicious. My grandchildren loved it so much they asked me to make it again – which I did today.
